The menu offers two choices during lunchtime, and the chef’s choice at night. Every morning the owner makes his way to the Toyosu Fish Market to handpick the fish for that day, something you are unlikely to encounter elsewhere in this region. Thoroughly applying his finesse to Japan’s delicacy of the day, the owner gracefully transforms the fish into real “Edo-Mae” Sushi. Skillfully handling his knife and forming the rice, you never grow tired of watching the performance. Once the Sushi is placed in front of you, before the taste can change, you swiftly place it into your mouth. Eating this Sushi, you will understand one precious part of Japanese food culture, the real deliciousness of “Edo-Mae” Sushi.
